Honey mushroom is a generic term for a wide complex of wild mushrooms in the Armillaria family, usually A. mellea. Yes, honey mushrooms are edible, with a few caveats. Here’s how to identify, harvest, cook and preserve them.

Drying works especially well for boletes, morels and agarics, whose flavors can actually be enhanced and intensified by the process. Other excellent mushrooms for drying include lepiota, russula, puffballs, and the caps of shiitake and honey mushrooms, among others.

When cooked, it is firm and granular. To some it is moderately sweet in flavor, but its edibility is marred for others by a mild bitter aftertaste and a somewhat gelatinous surface. If honey fungus is confirmed, the only effective remedy is to excavate and destroy, by burning or landfill, all of the infected root and stump material. This will destroy the food base on which the rhizomorphs feed and they are unable to grow in the soil when detached from infected material.
