How do I know how long to cook sous vide?

Medium-rare: 129°F (54°C) to 134°F (57°C), 1 to 4 hours (2 1/2 hours for temperatures under 130°F/57°C). Medium: 135°F (57°C) to 144°F (62°C), 1 to 4 hours. Medium-well: 145°F (63°C) to 155°F (68°C), 1 to 3 1/2 hours. Well done: 156°F (69°C) and up, 1 to 3 hours.

Can you sous vide too long?

While you can’t overcook your food with sous vide, leaving it in the water bath for too long can result in changes in the texture. After a while, it can turn out soft and mushy. Also, with fish and eggs, it can make the fish too dry and the eggs too firm.

Is 1 hour long enough to sous vide steak?

Generally speaking, a 1-2 inch thick portion of steak will reach the desired internal temperature in about 1 hour. The steak can sit in the sous vide container for up to 4 total hours, fully submerged, before any detrimental effects take place.

Which cut of steak is best for sous vide?

The best steak to cook sous vide is one with great marbling (streaks of white fat within lean section of steak) and proper thickness (1 ½ inches or more). You can find beautiful pieces of meat with great marbling and thickness in cuts such as Ribeye, Strip, Porterhouse/T-bone and Filet Mignon.

Can you sous vide 6 steaks at once?

Yes, you can sous vide multiple steaks. In fact, the number of steaks you can sous vide simultaneously is only limited by the size of your sous vide water bath. Every steak needs to have plenty of room for the water to circulate freely on all sides, for the most accurate and even cooking.

Can I put more than one steak in a sous vide bag?

They can be in the same pack, but should be separate, ideally not touching. You want the water to get to all surfaces of the steaks, so they cook evenly. (you could also stack them, but then you would need to alter your cooking time for the much thicker “piece” of meat).
