What is Niku miso ramen?

Nikumiso is a kind of ragú of minced pork, seasoned by miso paste. This cold noodle is a popular home cooking in hot & humid Japanese summer. If you cannot find hiyamugi noodle, substitute with somen or capellini.

What’s the difference between miso and udon?

Typically, udon noodles are made of 3 ingredients: flour, water, and salt. However, udon noodles for Miso Nikomi Udon are made of only flour and water. This reduces the salt content as miso gets salty after long-simmering.
