Should I pan sear a steak before grilling?

Searing meat doesn’t create an impermeable barrier that prevents the release of natural juices when cooking or slicing a steak or other cut of meat. But that doesn’t mean you should abandon searing altogether. You should always consider searing steaks before grilling, baking, braising, roasting, or sautéeing.

How long do you grill steak after searing?

The process of reverse-searing is really simple: Season a roast or a thick-cut steak (the method works best with steaks at least one and a half to two inches thick), arrange the meat on a wire rack set in a rimmed baking sheet, and place it in a low oven—between 200 and 275°F (93 and 135°C).

Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare (an internal temperature of 135 degrees F), 5 to 7 minutes for medium (140 degrees F) or 8 to 10 minutes for medium-well (150 degrees F).

Can you sear a steak and cook it later?

When steaks are at the correct temperature, remove them from the oven. At this point you can proceed with searing the steaks, or cover and refrigerate to cook later. If you have refrigerated the steaks after cooking them in the oven, return the steaks to room temperature before you sear them.

Should you season steak before grilling?
