Can you use bacon fat for a rue?

In simple terms, a roux is equal parts cooked fat and flour. It’s used to thicken soups, stews, and sauces; and in the South (and particularly New Orleans), it’s famously used in Gumbo and Étouffée. You can use any kind of cooking oil, butter, or bacon fat to make a roux.

When used in soups, sauces, and casseroles a roux provides creaminess and density, helps incorporate other fatty ingredients like cream or cheese, and generally binds things together into a cohesive finished product. Can you let gumbo simmer all day?

Once the roux is made all you need to do is let the gumbo simmer for a few hours. I let mine cook low and slow all day long. The longer it cooks, the better the flavor. You must serve this over rice because rice is just the best, it is also very traditional.
