Beet tops, or bull’s blood, are exactly what they sound like—they’re the leafy bits at the top of your beets. People hadn’t been using them in their cooking for a while, discarding them as you would the tops of carrots, but the funny thing about this is way back when, only the greens were eaten.

When should I pick my beet tops?
How to Harvest Beet Greens
- After about three weeks of growth, or when the plants reach at least 6″ tall, identify the largest, outer leaves.
- Work around the plants to pinch off these large leaves, taking about a quarter to a third of the total plant material.
Should you cut the tops off beets?
From a Maturing Crop For the best taste, beet greens should be cut fresh, when you are ready to use them. Using a sharp knife, cut one or or two of the outer leaves from each plant, slicing through the stem an inch or two above the soil level. Always make sure that the inner leaves are left intact.

Quantity. If you want to harvest beet greens before the roots are mature, snip just one or two leaves from each plant, leaving the inner leaves intact. The beet roots will continue to grow beneath the ground. If you cut back all the leaves, the beet roots might not grow adequately.
How do I know when my beets are ready to harvest?
To determine whether they are ready to be harvested, clear away some of the mulch or soil around the top of your beets and look for crowns protruding above the soil line. If you can see an inch or two sticking out above the soil, it’s a safe bet that they are ready for pulling!
