What is water spray retort?

Static Retort – Steam Water Spray™ (SWS) Steam is directly injected in the bottom of the retort for fast and uniform come-up. Water sprays running over the entire shell length intensely mix the steam and water and create a homogeneous temperature distribution that results in a uniform process throughout the retort.

The steam-air retort uses a mixture of steam and air, which is added to create an over-pressure in the retort. The air over-pressure allows thermal processing of a wide variety of containers including: glass, metal cans, rigid plastic, and flexible pouches.

UNCLEARED DEVIATION – When a deviation occurs in which an unsafe product condition exists and cannot be corrected for, then the batch is declared to have an Uncleared Deviation status. The Uncleared Deviation status notifies the retort operator that a deviation was detected and continues to exist in the batch.
