Carbonation will change it a lot. It is a funny thing where if you have too little, it is watery and if you have too much it is thin and fizzy, but just the right amount will make it full.

Why is my homebrew too foamy?

Hydrophobins are created by a fungus that infects malt grains during the brewing process, attracting carbon-dioxide molecules within the beverage to the surface. Too many carbon-dioxide molecules at the beer’s neck can cause the bottle to bubble over when it’s opened, much to breweries’ chagrin.

Too little pressure – If your keg has too little pressure in it it will cause the dissolved CO2 to free itself from the liquid. This causes gas bubbles in the beer lines or tap. If you can see bubbles in your beer line this is a likely cause.

What could be the cause? There are several possibilities, including too much carbonating sugar, bottling too soon, and using poor-quality malt or yeast. Let’s walk through each of these one at a time.

How do I increase my homebrew clarity?

The most common finings used by homebrewers are Whirlfloc or Irish Moss. Just add half a Whirlfloc tablet or one teaspoon of Irish Moss during the last ten minutes of the boil to help the beer clear quickly. Many homebrewers keep these ingredients on hand and add them to every brew.

The typical off-flavors to look out for are sour and/or diacetyl (buttery). Other common flavors that indicate an infection is soy sauce, solvent, and vinegar.

Is infected homebrew safe to drink?

In short, no. As far as I know, most “infected” beer is a version of vinegar. What happens if you over carbonated beer?

Overcarbonated beer makes it taste too sharp on the tongue, is wasteful due to too much foam, and can certainly alter the flavor you’ve worked so meticulously on crafting. I once over carbonated a New England IPA I brewed, and it ruined it completely.
